Chinese Recipe - Straw Mushroom with Crabmeat
|
|
Ingredients:
- 1 soft shelled crab (250 g)
- 750 g straw mushrooms (cooked 1 minute in boiling water)
- 750 g green cabbage or broccoli sections
- 1 stalk scallion, cut into 2.5cm / 1inch lengths
- 6 slices root ginger
- 1 tsp rice wine
- 8 tbsp oil
Seasoning for ingredients:
- ½ tbsp rice wine
- 2 stalks scallions (cut into 5cm or 2 inched lengths)
- 2 slices ginger root
Sauce ingredients:
- 1 tsp salt
- ¼ tsp black pepper
- 1 tsp sesame oil
- 1 cup water
- 1 tbsp cornstarch blended with 1 tbsp water
Directions:
- Clean crab and mix with seasoning ingredients. Steam for 10 minutes over high heat. When cool, remove meat from shell.
- Heat 4 tbsp oil in wok, stir fry green cabbage quickly with 1 tbsp water and 1 tsp salt till tender. Remove to plate.
- Heat remaining oil and stir fry scallion and sugar till fragrant. Add straw mushrooms, rice wine and sauce ingredients. Stir a while, then add crabmeat.
- Thicken with blended cornstarch.
- Dish out, serve hot, surrounded with green cabbage.
