Chinese Recipe - Soft-Shell Crab in Plum Sauce

Ingredients:

  • 450 gm soft shell crab (2x)
  • 1 red chilli, diced
  • 1 sprig onion, diced
  • 2 tbsp cornflour

Plum Sauce:

  • 2 tbsp sweet vinegar
  • 40 ml sour plum sauce
  • 1 ½ tsp vinegar
  • ½ tbsp sugar
  • ½ tsp salt
  • ½ tsp cornflour

Directions:

  1. Remove shell or crab, scrape inner parts, clean well. Chop into chunks. Mop dry and dust with cornflour.
  2. Heat up oil, deep fry until golden brown over medium heat. Turn to high heat, deep fry till crispy, dish and drain. Arrange on a dish.
  3. Bring plum sauce to boil and pour over crab. Sprinkle chilli and spring onion dices.
