Chinese Recipe - Stir Fried Squid with Leeks

Ingredients:
- 200 gm squids, 2x
- 100 gm Chinese leeks, section to 2” lengths
- 25 gm carrot, sliced
- ½ tsp chopped garlic
- 15 gm fresh ginger, sliced
- 5 gm glass noodles, soaked
Seasoning:
- 1 tsp salt
- ½ tsp sugar
- ¼ tsp sesame oil
- 1 tsp Shaoxing wine
Thickening:
Directions:
- Remove membrane, vein, eyes and mouth of squid then pat dry. Slash criss-cross pattern on surface and dice into 2”. Scald into boiling water until they curl up into flower shape. Dish and drain.
- Heat up wok with 2 tbsp of oil, stir fry chopped garlic and ginger till fragrant, add in squids, leeks and seasoning. Bring to cook and add in glass noodle and thickening as well.
