Chinese Recipe - Stir Fried Scallops with Chili Peppers

Use either fresh or frozen scallops for this dish
Serves 4
Ingredients:
- 10 scallops, cut in half, washed in salt water and drained
- ½ lb bamboo shoots, cut into thin strips
- 1 green pepper, cut into thin strips
- 4 dried Chinese mushrooms, soaked in water, drained and cut into thin strips
- 1 scallion, cut into thin strips
- 1-inch piece fresh ginger, minced
- 1 clove garlic, minced
- 2 chili peppers, chopped
Mixture A:
- 1 tbsp soy sauce
- 1 tbsp Chinese rice wine or sherry
- 1 tsp sherry
- A pinch of salt
- 2 tsp cornstarch, dissolved in 1 tbsp water
- 5 tbsp oil
Directions:
- Heat 2 tbsp of the oil in a hot wok and add the salt. Stir-fry the green peppers, bamboo shoots and mushroom. Remove.
- Heat the remaining 3 tbsp of oil. Stir-fry the green onion, ginger, garlic and chili peppers. Add the scallops and stir-fry briefly. Return the cooked vegetables to the wok. Add Mixture A, and toss together. Pour in the dissolved cornstarch mixture, using a circular motion.
