Chinese Recipe - Dried Scallops with Chinese Cabbage
|

Serves 4:
Ingredients:
- 2 dried scallops
- ½ cup boiling water
- 1 1/3 lb Chinese cabbage, cut into 1 x 4-inch strips
- ½ cup soup stock
- 2 tbsp soy sauce
- 1 tsp sugar
- 2 tsp cornstarch, dissolved in 2 tsp cold water
- 4 tbsp oil
- A few drops of sesame oil
Directions:
- Pour the boiling water over the scallops and let soak until soft.
- Heat the oil in a wok, and stir-fry the scallops and Chinese cabbage. Add the stock, the scallop-flavored water, soy sauce and sugar.
- Just before the liquid has completely evaporated, pour in the dissolved cornstarch. Cook until thickened. At the last minute, sprinkle with a few drops of sesame oil. Mix and serve immediately.
