Chinese Recipe - Dried Scallops with Chinese Cabbage

Serves 4:

Ingredients:

  • 2 dried scallops
  • ½ cup boiling water
  • 1 1/3 lb Chinese cabbage, cut into 1 x 4-inch strips
  • ½ cup soup stock
  • 2 tbsp soy sauce
  • 1 tsp sugar
  • 2 tsp cornstarch, dissolved in 2 tsp cold water
  • 4 tbsp oil
  • A few drops of sesame oil

Directions:

  1. Pour the boiling water over the scallops and let soak until soft.
  2. Heat the oil in a wok, and stir-fry the scallops and Chinese cabbage. Add the stock, the scallop-flavored water, soy sauce and sugar.
  3. Just before the liquid has completely evaporated, pour in the dissolved cornstarch. Cook until thickened. At the last minute, sprinkle with a few drops of sesame oil. Mix and serve immediately.
