Chinese Recipe - Stir Fried Crab with Scallion

This is an Eastern Chinese recipe
Ingredients:
- 3 to 4 hard shelled crabs
- 6 scallions, chopped
- 6 slices ginger root, finely chopped
- 2 tbsps dry sherry
- ¼ cup oil
- 2 eggs, beaten
- 3 tbsps cornstarch
- 2 garlic cloves, minced
- 2 tbsps soy sauce
- 1 tbsp sugar
- 2 tbsps red wine vinegar
- 1 tbsp water
Directions:
- Twist the legs and claws from the crabs and break each crab into 3 to 4 pieces. Discard the feathery gills and the grey stomach sac. Place the crab pieces, legs and claws in a dish. Add 3 of the scallions, half of the ginger and the sherry and leave to marinate for about 10 minutes. Take out the crab and set aside the marinade ingredients.
- Heat the oil in a pan. Beat eggs with 2 tbsps of the cornstarch until smooth. Coat the crab pieces with the egg mixture and add to the pan. Fry until golden brown, then lift out with a perforated spoon and drain on absorbent kitchen paper.
- Fry the remaining scallions and ginger together with the garlic in the oil remaining in the pan. Add the soy sauce, sugar and vinegar. Replace the crab in the pan. Dissolve the remaining cornstarch in the water and stir into the pan. Cook, stirring, until thickened. Transfer to a serving dish and sprinkle with the reserved scallions and ginger. Serve hot.
