Chinese Recipe - Shark's Fin with Chicken

This is a famous authentic Chinese recipe.
Ingredients:
- 720g shark’s fin raised in water
- 1 defeathered and paunched chicken (about 1.28 kgs)
- 240g lean pork
- 120g ham
Seasoning:
- A dash of onion lengths, ginger slices, salt, yellow wine and starch
- Adequate amount of MSG
- 1.6kg fine stock
Directions:
- Remove head, feet and entrails from the chicken and wash it clean.
- Put the shark’s fin in the pot, add onion, ginger, wine and fine stock to boil them for 30 minutes, take the fin out, place them in a porcelain pot, cover them with the chicken, lean pork and ham, add fine stock, MSG, salt, soy sauce and dash of starch, steam them in the steamer for 4 hours and take them out.
- Remove the ham, lean pork and fin soup for other use; bone the chicken, place it in a container and put the shark’s fin on it. Bring fine stock to boil, stir in starch solution and MSG, pour the mixture over the shark’s fin and sow a dash of chopped ham over for serving.
Shark finning is threatening the existence of sharks! Hundred of millions of sharks are killed annually for their fins alone. STOP eating shark's fin if you want the killing to stop.
