Chinese Recipe : Prawn Fritters with Asparagus

Serves 3

Ingredients:

  • 180 gm small tiger prawns, 12x
  • 250 gm asparagus
  • ½ tsp chopped garlic
  • 20 gm ginger, shredded
  • 1 red chili, shredded

Seasoning:

  • ¼ tsp salt
  • ¼ tsp sugar
  • Dash of sesame oil
  • 1 tsp Shaoxing wine
  • 2 tbsp water

Thickening:

  • ½ tsp cornflour

Directions:

  1. Remove head and shell, devein, clean and pat prawns dry. Discard hard stalks of asparagus, clean and section.
  2. heat up oil, deep fry prawns until cooked. Discard and drain.
  3. Heat up a wok with water by adding 2 tbsp of oil, blanch asparagus till cooked, dish and drain.
  4. Heat 1 tbsp of oil, stir fry chopped garlic, ginger and chili shreds.
  5. Return prawn fritters, asparagus and seasoning, stir fry and pour in thickening.
  6. Sprinkle shredded chilli on top.
