Chinese Recipe - Jellyfish with Chicken and Cucumber

Ingredients:

  • 2 cups shredded jellyfish
  • 1 cup shredded boiled chicken
  • 4 cups shredded cucumber

Sauce:

  • 2 tbsp vinegar
  • 3 tbsp soy sauce
  • 1 tsp ground mustard
  • 2 tbsp sesame oil
  • ½ tsp MSG

Directions:

  1. Wash jellyfish in salt water, place in lukewarm water, and soak overnight. Rinse, drain and shred. (Jellyfish should not be placed in hot water).
  2. Boil chicken until tender, allow to cool, and shred.
  3. Wash cucumbers in salt water and shred.
  4. Arrange shredded ingredients on plate.
  5. Mix sauce ingredients in a bowl and pour sauce over shredded ingredients before serving.

Note: Jellyfish may be soaked in water for weeks. Change water every day and use jellyfish as needed.
