Chinese Recipe - Fried Prawns with Tomato Sauce

|
Ingredients:
- 1 lb prawns, shelled
- 6 tbsp flour
- 1 egg, lightly beaten
- 14 tbsp bread crumbs
- Oil for deep frying
- ½ cup leek, cut into 2/3 inch pieces
- ¼ cup bamboo shoot, cut into 2/3 inch cubes
- ¼ cup carrots, cut into 2/3 inch cubes
- ¼ tsp minced ginger
- ¼ tsp minced garlic
- 3 tbsp oil
Sauce:
- 2 tbsp tomato ketchup
- 2 tbsp sugar
- 1 tbsp wine
- 1 tsp soy sauce
- 1 tsp vinegar
- 1 tbsp cornstarch, mixed with 1 cup water
Directions:
- Slit backs of prawns, remove black veins, and pound prawns with back of knife black.
- Dip prawn in flour, then in egg and bread crumbs.
- Heat oil and deep fry prawns to yellow-brown. Drain and cut into bite-size pieces. Place on serving dish.
- Heat 3 tbsp oil and fry leek, bamboo and carrot, adding ginger and garlic.
- Mix all sauce ingredients except cornstarch mixture and add to vegetables.
- Bring to boil and add cornstarch mixture, stirring constantly until mixture thickens.
- Pour sauce over prawns and serve hot.
