This is a Southern Chinese recipe
Ingredients:
12 large live oyster
1 ½ tsp salt
4 tbsps cornstarch
1 tbsp dry sherry
1 tsp ginger juice
Pinch of pepper
¼ cup all-purpose flour
1 tsp baking powder
2 tbsps oil
½ cup water
Oil for deep frying
1 scallion and few strips of red pepper to garnish
Directions:
1. Put the oyster into a bowl and clean off the slime with 1 tsp of the salt and 2 tbsps of the cornstarch. Scrub well, rinse under cold running water until clean. Parboil the oysters for 5 minutes, drain and shell.
2. Mix together the sherry, ginger juice and pepper. Add the oysters and turn to coat.
3. Mix the remaining cornstarch with the flour, baking powder and remaining salt in a bowl. Stir in the oil and water and beat to a smooth batter.
4. Heat oil to 180°C/350°F. Dip the oyster in the batter, then deep fry until golden brown. Drain and serve hot, garnished with scallion and pepper strips.
