Chinese Recipe - Braised Awabis in Brown Sauce

This is a famous authentic Chinese recipe.

Ingredients:

  • 12 awabis
  • 200g sandwich pork
  • 160g chicken feet
  • 2 stalks green vegetable
  • Seasoning:

  • Adequate amount each of oyster sauce, MSG, refine salt, sauce coloring, starch solution, sugar, sesame oil and cooking wine
  • 20g lard
  • 1 ½ tbsp cooking wine

Directions:

  1. Wash the awabis clean with water, raise them thoroughly in very hot water, brush them clean, put them in an earthen pot, add water, boil them for 6 to 7 hours until cooked, take them out, trim skirts off them, filter the original soup clean and place it together with the awabis in the earthen pot.
  2. Cut sandwich pork into pieces, scald them together with chicken feet in boiling water until cooked, scoop them out, wash them clean, put them into the earthen pot with the awabis. Put the pot on the stove, braise them over mild heat for 2 hours, remove sandwich pork and chicken feet and filter the soup clean for use.
  3. Pour the soup into the pot, add MSG, salt, sugar, oyster sauce, sauce coloring and starch, stir starch solution in, add chicken fat and sesame oil to stir well, lay the awabis neatly in a plate and pour the serving sauce over.
  4. Put the green vegetables in the pot, add refined salt, MSG and cooking wine, cook it over high heat and lay it around the awabis for serving.
