Chinese Recipe - Lotus Root and Pork Soup

Ingredients:
- 1 lb lotus root
- 1 ½ lbs spareribs
- 6 cups broth (from spareribs)
- 1 stalk leek, cut into small sections
- 2 tsp salt
- ¼ tsp MSG
Directions:
- Discard ends of lotus root. Remove skin and cut root in half lengthwise. Then slice thin. Soak in water with a small amount of vinegar to prevent discoloration.
- Simmer spareribs for 40 minutes or until tender, using enough water to produce 6 cups broth.
- Add lotus root, leek, salt and MSG. Simmer for 20 minutes longer and serve hot.
