Chinese Recipe - Double-boiled Fish Maw and Chicken Soup

Ingredients:
- 1 free-range chicken
- 5 black mushrooms, soaked
- 100g yu zu
- 10 red dates, seeded
- 1 liter boiling water
- 30g dried fish maw, soaked until soft
- Salt to taste
Directions:
- Blanch chicken in boiling water for 5 minutes. Dish up, clean and drain well.
- Put chicken, black mushrooms, yu zu, red dates and boiling water into a double boiler. Double-boil for 2 hours.
- Add in dish maw and continue to double boil for another 30 minutes. Add salt to taste. Serve hot.
