Chinese Recipe - Quick Fried French (Green) Beans in Onion and Garlic Sauce
This is a Northern Chinese recipe
This is an excellent dish to accompany rice and meat
Ingredients:
1 chicken stock cube
2/3 cup chicken stock
1 lb green beans
3 tbsps oil
2 tbsps butter
4-6 garlic cloves, minced
2 scallions, sliced
1 tsp salt
1 tbsp soy sauce
1 tsp sugar
1 tbsp dry sherry
Directions:
Dissolve the stock cube in the stock in a large saucepan over moderate heat. Add the beans and simmer until nearly all the liquid has evaporated, turning them constantly.
Heat the oil and butter in a pan. Add the garlic, scallions and the salt. Stir fry for 30 seconds. Add the beans and toss in the fat until well coated. Sprinkle with the soy sauce, sugar and sherry. Stir fry for 1 minute. Serve hot
