8 oz. celery
1/2 oz. dried shrimps
2 slices of chopped ginger
2 scallions cut into 1/2 inch lengths
2 tsps. Rice wine
Pinch of salt and MSG to taste
Oil for deep frying
Directions:
1. Wash and cut the celery lengths about 1 inch long, holding the knife at an oblique angle to the celery and turning the celery between each cut.
2. Put into boiling water for 4 to 5 minutes to par-cook, then drain well.
3. Put the shrimps into a pan of hot water and bring to the boil. Boil for
3 minutes, then leave to soak for a further 15 minutes. Drain and deep fry for 30 seconds in hot oil. Drain well.
4. Heat the wok with 2 tbsps. oil and stir fry the ginger and scallion for 15 seconds.
5. Add the celery and cook for another 30 seconds.
6. Stir in the rice wine and dried shrimps. Adjust the seasoning with salt and MSG and serve.
