Chinese Recipe : Bird's Nest Soup with Chicken

Ingredients:
- 4 bird’s nests
- 4 oz cooked chicken, shredded
- 4 slices boiled ham, shredded
- 6 cups chicken soup
- 1 tbsp salt
- ½ tsp MSG
- 4 snow peas, shredded
Directions:
- Soak bird’s nest overnight. Change water and remove feathers with tweezers.
- Heat chicken soup, add salt and simmer bird’s nest in soup for 20 minutes.
- Add chicken, ham, snow peas, and MSG. Serve hot.
Edible birds’ nests are about the size of a soup spoon and are mixed with feathers. They are built by swallow that live on the coasts of the China Sea. The nests, made chiefly from the dried, glutinous saliva of the swallows, are used in making soup. Since the swallow feed upon small fish, the nests have a high protein content. The price of birds’ nest will vary, since there are many varieties. The best ones, which have fewer feathers, are imported from the Philippines and North Borneo. Connoisseurs of Chinese cooking consider birds’ nest soup as one of the tastiest and most expensive dishes.
