Indian Recipe : Pickled Prawns

Serves 4

Ingredients:

  • 600g prawn (medium size), peeled
  • 3 2/3 tbsp ginger paste
  • 3 2/3 tbsp garlic paste
  • Salt to taste
  • 3 tbsp lemon juice
  • Mustard oil for frying
  • ½ tsp onion seeds
  • ½ tsp mustard seeds
  • t/s tsp fenugreek seeds
  • 4 whole red chilies
  • ½ tsp coriander seeds
  • ¾ cup onion, sliced
  • ½ cup tomato, chopped
  • 1 tsp green chilies, chopped
  • ½ tsp coriander powder
  • Red chili powder to taste
  • ½ tsp cumin powder
  • ½ tsp garam masala
  • ½ tsp turmeric powder
  • 2 tsp ginger, julienned
  • 5 tsp green coriander, chopped

Directions:

  1. Mix together half of the ginger-garlic pastes, salt and lemon juice. Marinate the prawns in the mixture and keep aside for 30 minutes.
  2. Heat oil in a wok, add the whole spices and sauté till they crackle.
  3. Add the sliced onion, sauté until transparent, add tomatoes, green chilies and half of the coriander powder. Stir fry for 5-10 minutes.
  4. To this, add salt to taste, red chili powder, remaining coriander powder, cumin powder, garam masala, turmeric powder, stir fry for another 10 minutes, add the marinated prawn and stir fry till cooked. Add julienned ginger and chopped coriander, stir. Remove from heat.
  5. Serve hot, garnished with green coriander and accompanied by any Indian bread.
