Asian Recipe : Japanese Rice Cakes

Cuisine : Japanese

Ingredients:

  • 6 cups cooked rice (Japanese variety, slightly glutinous)
  • ½ cup vinegar
  • 75 g sugar
  • 20 g salt
  • Horseradish, grated (Wasabi)
  • Soy sauce
  • Cooked dried gourd (kampyo) for topping
  • Cooked dried mushrooms (shiitake) for topping

Directions:

  1. Mix vinegar, salt and sugar and pour evenly over cooked rice in a bowl.
  2. Cut vinegar mixture into rice with a wooden spoon.
  3. This is sushi or Japanese rice. Until the time it is served, keep sushi rice in a wooden tub covered with damp cloth.
  4. To serve, mold 1 tbsp of rice, at a time, on the palm of you hand.
  5. Arrange molded rice in a serving platter.
  6. Top with mushrooms, gourd or your choice of vegetables.
  7. Serve with soy sauce mixed with little horse radish as a dip.
