  • 2 cups vegetable oil
  • 1 large onion, finely sliced
  • 2-3 long red chilies (or 2 birds-eye), finely sliced
  • 2.5cm piece green ginger, finely chopped
  • 1 tbsp lemon rind, finely chopped
  • ¼ cup asam (tamarind) juice
  • 1 tbsp sweet soy sauce
  • 1 tbsp brown sugar
  • 2 tbsp water
  • Shallots, finely chopped

  1. Clean fish and score both sides. Dry thoroughly with absorbent paper.
  2. Sprinkle fish with corn flour and salt mixed together, inside and out side.
  3. Heat oil and deep fry until golden brown. Remove to platter and keep warm.
  4. Pour off most of the oil leaving about 2 tbsp.
