Chinese Recipe - Stuffed Scallops with Shrimp Paste

Ingredients:
- 10 fresh scallops
- 80 gm crab meat
- 100 gm shrimp paste
- 2 stalks green spinach
- 10 Chinese wolfberries
- ½ tsp chopped garlic
- ½ egg white
Marinades:
- ¼ tsp salt
- Pinch of pepper
- ½ tsp cornflour
Seasoning:
- 1 tsp chicken stock granules
- ¼ cup water
- ½ tsp salt
- ½ tsp sugar
- 1 tsp Shaoxing wine
Thickening:
Directions:
- Clean scallops and drain well. Shrimp paste mix with marinades and knead into round shape. Stuff in shrimp paste into scallops. Steam for 10 minutes over high heat. Remove and arrange on a plate.
- Heat wok with water and add in 2 tbsp oil, blanch green spinach, dish and arrange on plate.
- Heat wok with 1 tbsp oil, stir fry chopped garlic till fragrant. Add in crab meat, Chinese wolfberries and seasoning. Pour in thickening followed by beaten egg white. Pour over scallops.
