Chinese Recipe - Stir Fried Crab with Special Sauce

Ingredients:
- 450 gm green crab (2x)
- 1 sprig spring onion (diced)
- 1 tsp garlic
- ½ tsp cornflour
- 1 tbsp white sesame seeds
Seasoning:
- 1 tsp dark soy sauce
- ½ tsp sesame oil
- 3 tsp sugar
- 2 tbsp vinegar
- 1 tbsp chilli oil
- 1 tbsp sesame sauce
Directions:
- Remove shell of crab, scrape inner parts, clean well. Cut into 8 pieces. Pat crab claws, mix with cornflour. Deep fry in hot oil until golden brown. Drain well and ready to use.
- Stir fry sesame seeds without oil till aromatic.
- heat up wok with 1 tbsp of oil, stir fry chopped garlic and add in crab pieces, season and fry well.
- Sprinkle with diced spring onion and sesame seeds.
