Chinese Recipe - Stir-Fried Crab with Hoisin Sauce

Ingredients:
- 450 gm green crab (2x)
- 3 tbsp chopped garlic
- 2 bird’s eye chilli
- 20 gm shallots, chopped finely
- 1 tsp cornflour
Seasoning:
- ½ tsp fermented soya paste
- 1 tsp hoisin sauce
- ½ cup chicken stock
- 1 tsp oyster sauce
- 1 tsp cornflour
Directions:
- Remove shell of crab, scrape inner parts, clean well. Cut into 8 pieces. Par crab claws, dust with cornflour, for later use.
- Add in chopped garlic and shallots, deep fry till golden brown. Deep fry for crab pieces as well and drain oil, for later use.
- heat up wok with 1 tbsp of oil, stir fry prefried garlic and shallots till fragrant, together with chilli, then add in crab pieces and seasoning, stir until the gravy is almost thick. Dish up and serve hot.
