Chinese Recipe - Stir Fried Clams with Basil

Ingredients:
- 600g clams
- 2 cloves garlic
- 3 stalks basil
Seasonings:
- 1 tbsp rice wine
- 3 tbsp soy sauce
- 1/2 tbsp sugar
- a dash of pepper
Directions:
- Soak clams in water to remove sand and grit. Drain.
- Fry chopped garlic in 2 tbsp oil, add clams and stir fry under high heat. Add seasonings when clam shells are starting to open.
- Add basil when gravy is almost dry. Stir well, dish up and serve.
