Chinese Recipe - Shrimp with Fresh Asparagus

This is a Northern Chinese recipe
Ingredients:
- 1 ½ lb raw shrimp, shelled and deveined
- 1 tsp salt
- 1 tsp dry sherry
- 1 tbsp cornstarch
- ¼ lb fresh asparagus, cut into 1 inch pieces
- 6 tbsps oil
- ½ tsp sugar
- 4 tbsps water
Directions:
- Mix the shrimp with half the salt, the sherry and 2 tsps of the cornstarch. Cook the asparagus in boiling salt water until tender but still crisp. Drain well.
- Heat the oil in a pan and add the shrimp. Stir fry until they turn pink. Add the asparagus, sugar and remaining salt and mix well. Dissolve in the water and add to the pan. Cook, stirring, until thickened. Serve hot.
