Chinese Recipe - Shrimp and Egg Patties

Ingredients:
- 10 oz shelled shrimps
- 1 tbsp salt
- 1 tbsp cornflour
- 1 tbsp chopped parsley
- 1 tsp chopped spring onions
- 3 eggs
- A few tbsp oil for shallow frying
- A few parsley sprigs for garnishing
Seasoning:
- ½ tsp salt
- ½ tsp sugar
- A pinch of pepper
- 1 tsp cornflour
- 1 tsp sesame oil
Directions:
- Devein and toss the shrimps with the salt and cornflour then rinse under a running tap till the water runs clear. Pat dry with a clean towel and dice. Season with half of the above seasoning. Place on to a platter with the parsley and spring onions.
- Break the eggs into a mixing bowl and stir in the remaining seasoning. Slide in the shrimps, parsley and spring onions and whisk until evenly mixed.
- Heat a pan with 2 tbsp oil. Put a tbsp of batter in the boiling oil to shallow fry till both sides are golden. Repeat, remove and dish. Garnish with the parsley sprigs.
