Famous Authentic Chinese Recipe - Shallow-fried Prawn Sections in Tomato Sauce

Ingredients:
- 12 fresh live prawns
- 1 tbsp dry starch
Seasonings:
A:
- 1 tsp chopped garlic
- 1 tbsp onion pellets
- 1 tsp chopped ginger
- 2 tsp peanut oil
- 1 tbsp wine
B:
- 4 tbsp clear soup
- ½ tsp salt
- 1 tsp sugar
- 2 tbsp tomato ketchup
- A dash of MSG
Directions:
- Devein the prawns, trim off feelers, feet and tail ends, wash the prawns clean, cut each into 2 to 3 sections and coat them with a dash of dry flour.
- Boil peanut oil to medium heat, scald the prawn balls of (1) and scoop them out with a meshed ladle; heating oil over high heat, deepfry the prawn sections again and scoop them out quickly.
- Leaving 2 tbsp of oil in the pot, put the A in, fry them until fragrant, add the prawn sections of (2), stir them well quickly, stir the B ingredients in, stir them together quickly, stir starch solution in, lift the pot off the fire, place the mixture in a plate and garnish it with red pepper for serving.
