Chinese Recipe - Prawns with Glass Noodles and Crab Roe in Casserole

Ingredients:
- 30g crab roe
- ½ tsp sesame oil
- 500ml chicken stock
- 120g glass noodles
- ½ tsp natural sea/rock salt
- 180g medium-sized prawns, shelled
- 1 tsp chopped coriander/spring onion
Directions:
- Blanch crab roe in hot water. Drain and mix with sesame oil. Set aside.
- In a pot, bring the chicken stock to a boil and add the glass noodles. Dish out the noodles when soft. Set aside. Reserve stock.
- Heat 100ml of the chicken stock in a wok and bring to a boil. Add the salt and braise the prawns for about 30 seconds until they turn pink. Add the glass noodles and crab roe. Mix well. Stir in the coriander/spring onion and remove from heat.
