Chinese Recipe - Pan-fried Oyster with Tea Leaves

Ingredients:
- 350 gm fresh oyster
- 3 gm Tie-Guan-Yin tea leaves
- 1 sprig spring onion, sectioned
- ½ tsp salt
- 2 tbsp cornflour
Seasoning:
- 2 tbsp Tie-Guan-Ying tea
- 1/3 tsp salt
- ½ tsp chicken stock granules
- ½ tsp sugar
Thickening:
Directions:
- Soak tea leaves with half cup of hot water for 5 minutes. Drain well and deep fry tea leaves until crispy. Remove and drain dry for later use.
- Clean oyster with salty water. Combine salt and cornflour to marinate oyster for 15 minutes. Heap up non-stick pan with 1 tbsp of oil, pan-fry oyster till golden brown. Remove for later use.
- Heat up 1 tbsp of oil again, stir fry ginger slices and chopped garlic till fragrant. Stir well oyster, spring onion and seasoning then pour in thickening and sprinkle crispy tea leaves on top.
