Famous Authentic Chinese Recipe - Mussels Coated with Mashed Taro

Ingredients:

  • 480g taro
  • 12 mussels
  • 1 fresh tomato
  • Adequate amount each of pineapple, green cherries and cabbage shreds

Seasonings:

  • Adequate amount each of salt, pepper, sesame oil, MSH and Shaoxing wine

A:

  • 1 big chicken egg
  • 1 tbsp dry starch
  • A dash each of salt and pepper

Directions:

  1. Wash the taro with skin clean, boil it until cooked, skin it, mash it, add salt, pepper, sesame oil and Shaoxing wine to mix well and add a dash of starch to mix well again.
  2. Using the meat pillars of the mussels, wash them clean, daub salt and pepper onto them, coat them with a dash of dry starch and then with the mashed taro of (1), daub a dash of starch onto them and dip them evenly in the crisp coating paste (the mixed (A) ingredients)
  3. Deep fry the (2) in boiling oil until light yellow, take them out, wait for the oil boiling vigorously and deep fry them once more until golden yellow.
  4. Lay pineapple slices and halved red cherries alternately on the rim, pile tomato slices on them, sow cabbage seeds into the inner circle, garnish them with parsley leaves and put the mussels coated with taro of (3) on top of serving.
