Famous Authentic Chinese Recipe - Lobster Balls on Jade Skewers


  • 1 fresh live lobster
  • 12 kales
  • 40g ham
  • ¼ cup fine stock


  • 1 tbsp Shaoxing wine
  • 1 tsp salt
  • A dash of MSG
  • Adequate amount each of sesame oil and pepper


  1. Insert a skewer or a chopsticks into the tail of the lobster to let urine out, wash it clean, prepare it well, leave the whole head for use, pull meat out to make balls and mix them well with salt, MSG, pepper and wine.
  2. Using the stalks of kales, carve a crisscross pattern on one end of each and soak them in water for a while to enable the carved ends to turn inside out like blossoming.
  3. Add a dash of candy sugar to ham, steam them for a while and cut it into sticks like chopsticks.
  4. Skewer the lobster balls on each of ham sticks of (3) and kale stalks of (2), scald them in boiling oil until tenderly cooked, scoop them out and remove oil; heating oil in the pot, fry them for a while and place them in a plate.
  5. Bringing fine stock to boil, season it with salt, MSG and sugar, stir starch solution in and pour the mixture over the skewered lobster balls for serving when hot.
