Chinese Recipe - Jady Shrimp

Shrimps with Green Peas & Young Pea Leaves

Ingredients:

  • 50g Fresh Green Peas
  • 150g Shelled Shrimps
  • 200g Young Pea Leaves ("Dou Miao")
  • 1 Egg White
  • A Dash of Salt
  • 1 tsp Cornstarch
  • A Dash of Pepper
  • 2 tsps Baking Soda
  • 1 tbsp Minced Ginger
  • 1 tbsp Minced Green Onion
  • Additional fried young pea leaves for garnish

Sauce:

  • 80 cc Stock
  • 1 tbsp Cornstarch
  • A Dash of Salt
  • A Dash of Pepper

Directions:

  1. Add the baking soda to the shrimps and mix well, let marinate for awhile and rinse THOROUGHLY. Then use a towel to dry the shrimps.
  2. Add the salt, pepper, egg white, cornstarch to the shrimps. Parboil the shrimps with oil until 70% done, then remove and put aside. Add 1 Tablespoon oil to the hot wok.
  3. Add minced ginger and minced garlic and stir fry until fragrant. Then add the shrimps and green peas and continue stir-frying.
  4. Add the ingredients for the sauce (mix well first) and cook until the sauce turns thick. Serve hot. If prefer, you may garnish with additional fried young pea leaves.
