Chinese Recipe - Fried Shrimp Balls

Ingredients:
- 1 lb shrimp, shelled and minced
- 3 water chestnuts, chopped (or ½ cup chopped bamboo shoot)
- ½ tsp minced ginger
- 1 egg white, unbeaten
- 1 tsp salt
- 1 tsp cornstarch
- 1 tsp wine
- Oil for deep frying
Directions:
- Mix all ingredients well. Shape mixture into balls with a teaspoon.
- Heat oil and deep fry shrimp balls to golden brown. Serve hot.
Note: To remove black vein from shrimp, use a toothpick. Stick through the back and lift up.
