Famous Authentic Chinese Recipe - Fried Lobster Pellets


  • 1 lobster
  • Adequate skinned water chestnuts, white fungi, mushrooms and parsley stalks
  • 1 cup deep-fried green bean threads
  • 2 lettuces


  • Adequate amount each of oil, salt, MSG, pepper and Shaoxing wine


  1. Prepare the lobster well, leaving its head and tail for use. Take the lobster meat out, cut it into pellets, add salt and wine to mix well, scald them in boiling oil, take them out and drain oil away for use. Steam the lobster head and tail until cooked, apply boiled oil thinly onto them and place them separately on both ends of a plate. Slice cucumber, tomato and orange separately and lay them on the rim.
  2. Wash white fungi and mushrooms which have been soaked until soft and skinned water chestnuts clean and cut them into pellets; chop parsley stalks. Wash lettuces clean thoroughly, trim them round, drain and lay them in a saucer.
  3. Heating oil in the pot, put white fungi and mushrooms in, add the lobster pellet of (1) in, sprinkle wine in, fry them well, put skinned water chestnuts and parsley stalks in, season them and fry them well.
  4. Lay green bean threads in the lobster plate, put the fried (3) on them and wrap them with lettuce for serving hot.
