Chinese Recipe - Dried Scallop with Garlic

Ingredients:

  • 8 oz (224 g) dried scallops
  • 1 cup water
  • 6 oz (168 g) garlic cloves
  • 3 cups hot oil
  • 1 piece chicken fat
  • 8 oz (224 g) green vegetables
  • 2 cups boiling water
  • 3 tbsp oil
  • 1 tbsp salt

Seasoning:

  • 1/2 tsp sugar
  • 1 tsp wine
  • 1/2 cup scallop water
  • 1/8 tsp pepper

Gravy Mix:

  • 1 tsp cornstarch
  • 1 tbsp water
  • 1 tsp oyster sauce

Directions:

  1. Wash the scallops and place on a plate, pour in water (1/4" (0.5 cm) high) and soak for an hour. Turn and soak the other side for another hour.
  2. Peel and deep fry the garlic in the hot oil until golden brown. Leave aside for later use.
  3. Arrange the scallops in s shallow bowl. Add the remaining water to steam for 30 minutes then drain the water and keep as stock.
  4. Sprinkle half of the sugar and put the garlic and chicken fat on top of the scallops to steam for another 30 minutes. Discard the chicken fat.
  5. Wash and blanch the green vegetables in the boiling water with 1 tbsp of the oil and salt. Squeeze out the excess water and arrange on a platter. Drain the liquid in the bowl and turn it upside down on top of the vegetables.
  6. Heat the wok with the remaining oil. Sizzle the wine and bring the scallop stock to boil. Season to taste. Thicken the juice with the gravy mix. Pour over the scallops and serve hot.
