Chinese Recipe - Crab in Wine

Ingredients:
- 450 gm coral crab (2x)
- 30 gm ginger (shredded)
- 1 sprig spring onion (diced)
- 1 stalk coriander leaves, chopped
- 1 cup rice wine
- 1 tsp salt
- 1 tsp Shaoxing wine
Directions:
- Remove shell of crab, scrape inner parts and clean well. Cut into 8 pieces. Pat crab claws, for later use.
- Arrange crab on a dish, add in rice wine, ginger and salt, mix well. Steam for 12 minutes.
- Dish up and sprinkle with wine, spring onion, coriander leaves and red chillies.
