Chinese Recipe - Crab in Fermented Soya Paste

Ingredients:
- 450 gm green crab (2x)
- 25 gm ginger, minced
- 1 tsp chopped garlic
- 2 chilli padi, chopped
- 1 tbsp fermented soya paste, minced
- 1 sprig spring onion, sectioned
- 1 tbsp cornflour
Seasoning:
- 1 tbsp oyster sauce
- ½ tsp pepper
- 1 tsp sugar
- 2 tbsp water
Directions:
- Remove shell of crab, scrape inner parts, clean well. Cut into 8 pieces. Pat crab claws. Deep fry in hot oil till half-cooked, dish and drain.
- Heat up wok with 2 tbsp of oil, stir fry chopped garlic, ginger, fermented soya paste and chilli till fragrant.
- Return crab and seasoning, keep stirring till gravy is thick.
- Sprinkle with spring onion on top. Dish up.
