Chinese Recipe - Braised Shrimp with Bean Curd

Ingredients:
- 1 lb shrimp
- 1 tsp ginger juice
- ½ tsp salt
- 1 tsp cornstarch
- 6 tbsp oil
- 5 tbsp chopped leek
- 2 cakes bean curd (about 1 lb), cut into small squares
- 1 tbsp wine
- 2 tsp salt
- ½ tbsp sugar
- 2 tsp cornstarch, mixed with 2 tsp water
Directions:
- Wash and shell shrimp. Remove black vein from each.
- Dredge shrimp with ginger juice, salt and cornstarch.
- Heat 3 tbsp oil, sauté shrimp and remove to a plate.
- Heat 3 more tbsp oil, brown leek, and add bean curd, sautéed shrimp, and seasonings. Boil for 10 minutes, add cornstarch mixture to thicken, and serve hot.
Note: One cup sliced cucumbers may be added to this dish.
