Chinese Recipe - Abalone and Mushroom in Oyster Sauce

|
Ingredients:
- 1 can abalone (retain ½ cup of the liquid)
- 10 medium sized dried Chinese mushrooms (soaked and stalks removed)
- 3 tbsp vegetable or corn oil
- 1 head lettuce (leave separated & washed)
- 2 tsp cooking wine
- ¼ tsp ground white pepper
- ½ cup chicken stock
Sauce ingredients:
*Blend the following ingredients:
- 1 tsp dark soy sauce
- ½ tsp sugar
- ½ tsp sesame oil
- 1 tbsp cornstarch
- 2 tbsps water
Directions:
- Arrange lettuce leaves on a plate and leave aside.
- Cut abalone into ¼ inch thick slices.
- Heat the 3 tbsp oil in a wok. Add wine and simmer briefly before adding abalone liquid, white pepper, chicken stock and mushrooms.
- Braise mushrooms 5 minutes or till tender.
- Stir in blended sauce ingredients and bring to the boil.
- Add abalone slices last. Simmer 30 seconds and remove to plate covered with lettuce. Serve hot.
