Chinese Salad Recipe : Tomato and Cucumber Salad

The cooked sauce is poured over the salad while it is still hot.

Serves 4:

Ingredients:

  • 4 tomatoes, dipped in hot water, peeled and stemmed
  • 1 cucumber, cut into ½ inch slices

Mixture A:

  • 2 tbsp sugar
  • 2 tbsp vinegar
  • 1 tbsp ketchup
  • 2 tbsp water
  • 1 tsp cornstarch
  • A few drops of sesame oil

Directions:

  1. Cut each tomato into 8 wedges. Trim the cut edges of the cucumber slices, rounding them off to form a smooth surface. Place the cucumber in the center of a serving dish, and surround with the tomatoes.
  2. Heat Mixture A, cooking until thickened. Add a little sesame oil. Pour the heated sauce over the vegetables.
