This is a delicious salad that has to be eaten to be believed. IF the bean sprouts used are home grown, be sure to remove roots and wash thoroughly before cooking.
Serves 4:
½ lb bean sprouts, roots removed, washed and drained
1 tsp salt
1 tbsp vinegar
1 slice ham
½ medium cucumber
Dressing:
1 tbsp soy sauce
1 tbsp sesame oil
Mustard to taste
A dash of MSG
Directions:
Blanch bean sprouts in boiling water, to which vinegar and salt had first been added, then cool quickly by placing in cold water, then drain.
Cut the ham and cucumber into fairly thin strips.
Combine ingredients for dressing.
Place the bean sprouts on a large plate and top with the stripped ham and cucumber. Pour on the dressing immediately before serving and eating.
