Chinese Recipe : Stirfried Chicken Special
Ingredients:
1 chicken breast (diced)
1 cup cashew buts (blanched and deep fried till golden brown)
½ cup bamboo shoots (diced)
½ cup dried Chinese mushrooms (soaked and diced)
¼ cup stock
Oil for deep frying
2 slices fresh ginger (finely shredded)
Seasoning ingredients:
2 tsp cornstarch
1 tbsp sherry
¼ tsp pepper
¼ tsp sugar
¼ tsp salt
1 tsp soy sauce
Directions:
Mix diced chicken well with seasoning ingredients. Set aside for 20 minutes.
Heat oil and stir fry ginger. Add seasoned chicken and stir fry for about 2 minutes.
Add the diced bamboo shoots and mushrooms. Stir in the stock and cook, covered, 2 to 3 minutes.
Stir in cashew nuts, only to heat through. Serve at once.
