Chinese Recipe : Chilled Almond-Flavor Soybean Jelly with Longan
The "north almond" is bitter, small and round and said to originate from North China. The "south almond" is from South China an dis sweet, larger and flatter. The almonds are always cooked together to balance out the flavor. Both almonds can be bought from Chinese medical halls.
Ingredients:
Almond milk:
300g south almonds (nam hung)
150g north almonds (pak hung)
2 litres water
Jelly:
1.5 litres almond milk
200ml fresh milk
250ml condensed milk
4.5 tsp jelly powder
20 canned longans
Directions:
To prepare almond milk: Soak the almonds in the water for 2 hours before blending.
To prepare jelly, bring the almond milk to a boil. Slowly add the fresh milk and condensed milk, stirring.
Add the jelly powder and mix well. Simmer briefly.
Remove from heat and pour into a big mould or individual moulds.
Allow to cool before refrigerating overnight. Serve cold with longans on the side.
