Chinese Recipe - Dry Cooked Green Beans

This is a Western Chinese recipe
Ingredients:
- Oil for deep frying
- 1 lb string beans
- 2 tbsps oil
- ¼ lb ground beef or pork
- 1 tsp salt
- 1 tsp minced ginger root
- 1 tbsp sugar
- 5 tbsps water
- 1 tbsp soy sauce
Directions:
- Heat the oil to 180°C/350°F. Deep fry the beans until they are wrinkled. Drain on absorbent kitchen paper. Arrange in a dish.
- Heat 2 tbsps oil in a pan. Add the meat, salt, ginger, sugar, water and soy sauce and stir-fry until the meat begins to turn brown. Cook over a high heat until all the liquid in the sauce has completely evaporated. Serve the beans with the meat sauce on top.
