Chinese Recipe : Winder Melon and Spare Rib Soup

Ingredients:
- 500g winter melon (with seeds and skin)
- 3 liter water
- 300 g spare ribs, cut into pieces
- 20 dried lotus seeds
- 8 red dates, seeds removed
- 1 small piece dried mandarin orange peel, soaked
- 2 cm old ginger, crushed
- Salt to taste
Directions:
- Blanch spare ribs in boiling water for 5 minutes. Dish up, wash and drain.
- Wash winter melon and cut into chunks. Put into a stock pot and pour in water. Bring to boil.
- Add in the remaining ingredients and bring to boil. Lower the heat and simmer for another 2 ½ hours.
- Add salt to taste. Serve hot.
