Chinese Recipe : Double-boiled Sea Cucumber and Chicken Soup

Ingredients:
- 300g pre-soaked sea cucumber, cut in thick slices
- 1 chicken whole leg
- 3 slices ginger
- 5 red dates, seeded
- 800 ml boling water
- 1 tbsp rice wine
- Salt to taste
Directions:
- Blanch sea cucumber and chicken in boiling water for 5 minutes. Dish up and clean.
- Put all ingredients and boiling water into a double-boiler and double-boil at high heat for 3 hours. Add in rice wine and salt. Serve hot.
