Chinese Recipe - Fried Shark's Fin with Egg

Ingredients:

A:

• 115 g well prepared shark's fin
• 115 g crab meat
• 60 g roasted lean pork
• 40 g canned bamboo shoots
• 3 stalks spring onions

B:

• 3 tbsp water/stock
• ½ tsp salt
• ½ tsp sugar
• 2 tsp cornstarch
• ½ tsp sesame oil

C:

• 7 Eggs
• 1 ½ tsp soy sauce
• ½ tsp sesame oil
• Pepper to taste

Directions:

1. Cut roasted pork, bamboo shoots and spring onions into thin slices. Squeeze extra water out from the bamboo shoots, leave aside.
2. Mix (B) ingredients together, leave aside. Put (C) ingredients in a bowl and beat lightly, add in (A) mix well.
3. Put in 2 tbsp of oil in the wok, place over medium heat. Pour in (A) and (C) mixture, stir fry continuously until cook. While stir frying add a little oil once a while (total oil used is about 4 tbsp)
4. Add in (B), mix well and serve hot.
