Chinese Recipe - Fried Prawns with Tomato Sauce

Ingredients:

  • 1 lb prawns, shelled
  • 6 tbsp flour
  • 1 egg, lightly beaten
  • 14 tbsp bread crumbs
  • Oil for deep frying
  • ½ cup leek, cut into 2/3 inch pieces
  • ¼ cup bamboo shoot, cut into 2/3 inch cubes
  • ¼ cup carrots, cut into 2/3 inch cubes
  • ¼ tsp minced ginger
  • ¼ tsp minced garlic
  • 3 tbsp oil

Sauce:

  • 2 tbsp tomato ketchup
  • 2 tbsp sugar
  • 1 tbsp wine
  • 1 tsp soy sauce
  • 1 tsp vinegar
  • 1 tbsp cornstarch, mixed with 1 cup water

Directions:

  1. Slit backs of prawns, remove black veins, and pound prawns with back of knife black.
  2. Dip prawn in flour, then in egg and bread crumbs.
  3. Heat oil and deep fry prawns to yellow-brown. Drain and cut into bite-size pieces. Place on serving dish.
  4. Heat 3 tbsp oil and fry leek, bamboo and carrot, adding ginger and garlic.
  5. Mix all sauce ingredients except cornstarch mixture and add to vegetables.
  6. Bring to boil and add cornstarch mixture, stirring constantly until mixture thickens.
  7. Pour sauce over prawns and serve hot.
