Chinese Recipe - Dried Scallops with Eggs

Ingredients:

  • 10 dried scallops, about 2 oz
  • 1 cup water
  • 2 tbsp wine
  • 5 eggs
  • 1 tsp salt
  • ½ tsp sugar
  • 6 tbsp oil

Directions:

  1. Heat 1 cup water to boiling point, add 1 tbsp wine, and soak dried scallops in mixture overnight. Save water from soaking and strain out any sand or sediment that remains.
  2. Beat eggs, adding 1 tbsp wine, 1 tsp salt, ½ tsp sugar, and water in which scallops have soaked. Add scallops and mix thoroughly.
  3. Heat 6 tbsp oil and fry mixture, stirring well until eggs are done.

Note: The water in which the scallops have soaked adds excellence flavor to this dish.
