Chinese Recipe - Dried Scallops with Eggs

Ingredients:
- 10 dried scallops, about 2 oz
- 1 cup water
- 2 tbsp wine
- 5 eggs
- 1 tsp salt
- ½ tsp sugar
- 6 tbsp oil
Directions:
- Heat 1 cup water to boiling point, add 1 tbsp wine, and soak dried scallops in mixture overnight. Save water from soaking and strain out any sand or sediment that remains.
- Beat eggs, adding 1 tbsp wine, 1 tsp salt, ½ tsp sugar, and water in which scallops have soaked. Add scallops and mix thoroughly.
- Heat 6 tbsp oil and fry mixture, stirring well until eggs are done.
Note: The water in which the scallops have soaked adds excellence flavor to this dish.
