Chinese Salad Recipe : Chinese Chicken Salad with Water Chestnuts

Ingredients:

• 2 lbs. boneless chicken breasts, skinned & cut in chunks
• 1/4 c. cornstarch
• 1/4 c. oil
• Garlic powder
• Diced onion
• 1 lg. tomato, chunked
• 1/3 c. water chestnuts
• 1 c. slant sliced celery
• 1/4 c. soy sauce
• 2 c. lettuce

Directions:

1. Roll chicken in cornstarch. Quickly brown in hot oil over medium heat.
2. Sprinkle with garlic and onions. Add tomatoes, water chestnuts and celery. Stir. Add soy sauce. Cover, reduce heat, simmer for 5 minutes.
3. Remove from heat; add lettuce and toss.
